Cheese Meatloaf (Mom’s)

1 1/2 pound ground beef

1 egg

3/4 cup bread crumbs

1/2 cup chopped onion

15 oz. tomato sauce

1 tsp. salt

1 tsp. pepper

2 cups mozzerella cheese

Combine beef, eggs, bread crumbs, onion, 1/3 cup tomato sauce, salt and pepper.  Mix well.  Shape into flat rectangle about 10x12 on wax paper.  Sprinkle with cheese, evenly over meat mixture.  Starting at the short end – roll up.  Bake in shallow pan at 350 degrees for an hour or until done.  Drain off fat.  Pour remaining sauce over roll and garnish with cheese.  Return to oven an additional 5 minutes or until cheese is melted.
