Roasted Green Beans w/garlic & pine nuts

2T olive oil

1 lb. fresh whole green beans, trimmed

1 thinly sliced onion

10 - 12 med cloves garlic, peeled

Salt & pepper

1 -        2 T balsamic or red wine vinegar

1 c lightly toasted pine nuts

1)         Preheat oven to 400.  Brush large baking dish with 2 T olive oil

2)         Spread the green beans, onions, garlic in dish and salt and pepper

3)         Bake for 20 minutes, occasionally stirring until the beans are as tender as you like.

4)         Remove from oven; drizzle with vinegar and top with pine nuts.

note:  some people don’t eat the garlic, just use them for flavor -  they do

loose their strength when baked - tastes good!
