4 c cooked and sliced red potatoes
1 rounded T flour
3 slices bacon, sliced
Fry bacon until light brown; remove from pan. Add 1 T butter and blend in flour to the bacon grease in pan.
Combine the following:
¼ c sugar
¼ c vinegar
¾ c water
1 T salt
¼ tsp pepper
1 T minced onion
½ c finely chopped celery
Add water and vinegar mixture; salt and pepper. Let mixture come to a boil and thicken a little. Pour over potatoes, onion, celery and half of bacon. Sprinkle ½ bacon on top.
