White Bread (Gram’s)

1 cake compressed yeast

¼ c water

2 c scalded milk

¼ c butter

2 T sugar

2 tsp salt

6 c sifted flour (more or less)

Heat oven 400°.  Pour hot milk over butter; add sugar, salt in large mixing bowl.  Cool to luke-warm.  Add yeast and 3 c flour.  Beat well.  Add remaining flour and mix well. Turn out on floured counter and knead until smooth and satiny.  Put in greased bowl and turn once.  Let rise until double in size.  Punch down.  Let rise again.  Shape into two (2) loaves and put in greased 9 x 5 x 3 pans and let rise until double.  Bake 35 minutes.
