Raspberry Ice

˝ cup sugar

1 cup water

2 cups fresh raspberries, pureed

2 Tbsp. Cherry flavored liqueur

1 tsp. Grated lemon peel

6 fresh raspberries

6 mint leaves

1.          In medium saucepan, combine sugar and water; mix well.  Bring to a boil over medium-high heat, stirring occasionally.  Reduce heat; simmer 4 minutes.  Cool to room temperature.

2.          Stir in raspberry puree, liqueur and lemon peel; mix well.  Pour into 9x5-inch loaf pan.  Freeze 1 hour.

3.          Using fork, scrape frozen portions creating “snowy” texture.  Freeze an additional 1 to 2 hours or until all portions of mixture have frozen, scraping every 30 to 45 minutes.

To serve, spoon into 6 individual dessert dishes; top each with raspberry and mint leaf.
