Cream Cheese Mint (double recipe)

1 3oz pkg cream cheese

1 T softened butter or margerine

3 cup confectioners’ sugar

4 drops peppermint oil

Food coloring paste

In bowl, combine cream cheese, butter and confectioners’ sugar.  Mix in peppermint oil.  Color with food coloring.  Roll mixture into small balls and place on wax paper.  Flatten with a fork dipped in confectioners’ sugar.  Place in refrigerator to dry for about 2 hours on wax paper.  When dry freeze or refrigerate.
