1 lb chicken livers
3 hard-boiled eggs
1 small onion, finely chopped
salt and pepper
¼ c cooking oil or chicken fat (bacon grease)
2 T mayonnaise
Boil chicken livers till done (use very little water – do not over cook). Force through chopper with eggs, onions, and salt and pepper to taste. Add oil and mayonnaise and beat till smooth. Chill. Serve with small rye rounds or crackers.
